This easy 5 ingredient corn casserole is creamy, buttery, and comes together in one bowl. Made with Jiffy corn muffin mix, it's the perfect cozy side dish for holidays, potlucks, and weeknight dinners.
Preheat your oven to 350°F and melt the butter. Grease an 8x8 inch baking dish with cooking spray.
In a large mixing bowl, combine the drained corn, creamed corn, sour cream, and melted butter. Stir until well mixed.
Gradually add the corn muffin mix and keep stirring until the batter is smooth and everything is well combined.
Season with salt and pepper to taste.
Pour the mixture into the greased baking dish and spread it evenly.
Bake for 45 to 55 minutes, until the top is golden brown and the center is set. A toothpick inserted in the middle should come out mostly clean.
Let it cool for a few minutes before serving.
Notes
Slow cooker method: Grease a 6 quart slow cooker, mix all ingredients in a bowl, and pour in the batter. Cook on high for 2 to 3 hours or on low for 4 to 5 hours, until the center is set.For a fluffier, more cornbread-like texture, whisk in one or two eggs before baking. This recipe is egg-free as written for a softer, spoonbread-style casserole.Make ahead: Prepare the mixture a day in advance, cover, and refrigerate. Let it sit out to come closer to room temperature before baking so it cooks evenly.Storage: Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat in a 350°F oven for 15 to 20 minutes.Tip: Drain your canned corn well to avoid a soggy center, and let the casserole rest for about 10 minutes after baking so it sets before slicing.
